What Is Dalgona Coffee?

Dalgona coffee is a type of coffee made by whipping equal parts of instant coffee, sugar, and hot water until it becomes light brown, fluffy, and frothy. This frothy mixture is then added to cold milk and ice to make a refreshing iced coffee, or to hot milk for a warm coffee drink.

You can also top it with honey, cocoa, coffee powder, or crushed biscuits

Where does Dalgona Coffee Trend came from?

1997 (Macau): A man named Leong Kam Hon invented the drink in 1997 at his small cafe in Macau called Hon Kee. He made it by hand after a tourist couple asked for a whipped coffee drink. It did not stop there, one day he served the drink to a movie start Chow Yun-fat and he loved it. In 2004, the drink started receiving first wave of international attention. On the menu, the owner just called it “hand-beaten coffee.

2020 (The Celebrity Boost): In January 2020, a South Korean actor named Jung Il-woo tried the drink on a TV show called  “Stars’ Top Recipe at Fun-Staurant”. He said it tasted just like dalgona, a traditional Korean honeycomb toffee. Because of his comment, everyone started calling it “Dalgona Coffee.” Even though it has that name, the drink does not actually have any candy in it.

Why Use Instant Coffee?

Using instant coffee is a key ingredient here because:

1: It dissolves easily as the water has already been removed during the manufacturing process.

2: Instant coffee acts as a surfactant and creates a stable foam when whisked with a little sugar and water. It traps air bubbles effectively than brewed coffee.

Ingredients

  • 2 tbsp instant coffee
  • 2 tbsp sugar
  • 2 tbsp hot water
  • 1 cup cold milk
  • Ice cubes

Equipment

  • Hand mixer or Coffee beater machine

Materials

  • 2 tbsp Instant coffee ( or decaf instant coffee)
  • 2 tbsp Sugar
  • 2 cup Cold Milk ( you can also use almond milk )
  • 2 tbsp Hot water
  • Ice cubes
  • ( optional ) Whipped cream or cocoa powder for topping

Instructions

  • In a bowl or cup, add the instant coffee, sugar, and hot water, then mix thoroughly. If you are using a bowl, you can use a hand mixer, while a coffee beater works well for a cup. Whisk vigorously until the mixture becomes thick, creamy, and frothy.
  • Take a glass, fill it with ice cubes, and pour one cup of cold milk over them per serving (If you like your coffee stronger, add less milk).
  • Spoon the coffee froth on top of the milk, then stir well.
  • Optional: You can add whipped cream or sprinkle some cocoa powder on top.

Tips for Perfect Whipped Coffee

  • Use equal ratios of coffee, sugar, and water. If you use too much water then the mixture will remain liquid. If you use little sugar, the foam will disappear in seconds.
  • Whisk long enough to get a thick foam. If you stop it too early the foam will sink into your milk instead of floating on top. For creamy froth, make sure to mix the coffee mixture for maximum 5 minutes.
  • Use chilled milk for a refreshing taste. The reason is the cold milk keeps the froth sitting on top. The hot or warm milk will make it froth melts faster.

Common Mistakes to Avoid

  • Using cold water instead of hot. Your coffee will remain grainy and watery if you use cold water. You wont get the thick cloudy texture no matter how long you beat it.
  • Using coarse coffee instead of instant. Ground coffee does not dissolve in water like it does in French press. Instant coffee is water soluble as it has been processed before.
